So tonight I totally felt like I was channeling my mom. When I was a kid she was always trying to make our traditional Mexican dinners more healthy. I hated when she did that. I'd ask her to make Caldito and she'd add all kinds of veggies to it, and in the end it was just vegetable stew- blech! I have always been a traditionalist when it comes to a lot of my favorite foods. When it comes to comfort foods I don't like change. Well tonight my husband asked me to make Spanish Rice to go with our Burritos. So in trying to keep my points down I made it with brown rice. The whole time it was cooking I was thinking to myself this is going to be so gross. In the end it wasn't gross, but it wasn't great either, but desperate times call for desperate measures and I needed to stay within my points.Good news is, I did stay within my points today plus some to spare.

I am home with my son
Greg works from home 3 days a week

Next time, plan points for white spanish rice. I refuse to compromise comfort foods...then they are just food, not so comforting. SUCH AS 9 points for a Lean Cusine Pizza, or two slices of cheese and veggie pizza from Modern for 10 points??? Hmmm, which one is going to be WAY tastier and more satisfying. NOW, honestly, I have to plan for enough points for 3 slices, cause I have no control when it comes to pizza...let's be real here. ;)
ReplyDeleteI've done the brown spanish rice, and my husband refuses to acknowledge it. Eat half a cup instead of a cup of white rice. Go Alisa, go!!!!
ReplyDeleteThat's how I feel about whole wheat pasta! It's an abomination, but I've gotten used to eating it occasionally. And sometimes I don't hate it.
